Authentic Philly Cheesesteak
Description
The backbone of the Authentic Philly Cheesesteak is the thinly sliced steak, seasoned with salt and pepper, and quickly seared in a single layer to preserve tenderness and juiciness. Some versions include sautéed onions cooked until soft for sweetness and texture contrast, although they can be omitted. The chopped steak then simmers briefly with the onions before being topped with slices of cheese that melt smoothly over the warm meat.
The filling is served inside a soft hoagie roll, traditionally an Amoroso roll, which adds a slightly chewy texture and holds the juicy ingredients well. Variations often introduce other vegetables like bell peppers or mushrooms, pickled hot peppers for heat, or condiments like mayonnaise, mustard, or hot sauces to enhance flavor.
While the core sandwich relies on a balance of tender beef, melting cheese, and soft bread, simple additions allow for customization without overwhelming the primary flavors. Serve immediately to enjoy the cheese still melted and the meat warm.
Ingredients
- 2 rib eye steak or top round, beef; plural
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt to taste
- 1/2 teaspoon black pepper to taste
- 4 hoagie roll Amoroso Rolls for authenticity
- 1 medium yellow onion thinly sliced
- 4 lices provolone cheese or American cheese or cheese whiz
Instructions
- Slice steaks as thin as possible. Season with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Add in sliced onion and saute until soft, about 5-7 minutes. Remove and set aside. If not using onion, proceed immediately to the next step.
- Add slices of steak into the pan in one layer to sear, 1 to 2 minutes, then flip and sear the other side.
- Use a spatula to chop up steak. Add in cooked onions (if using) and any other desired additions.
- Reduce heat to low and top chopped steak with cheese. Let melt, then transfer to hoagie roll. Serve immediately.
Notes
- Sautéed bell peppers, mushrooms, and various pickled or hot peppers can be added for extra flavor and texture.
- Condiments such as mayonnaise, mustard, and hot sauce are popular choices for customizing the sandwich.
- Ensure cheese is melted over the meat before placing it on the hoagie roll for traditional texture.
