Authentic Pico De Gallo (Salsa Fresca)

Authentic Pico De Gallo is a fresh salsa made from diced Roma tomatoes, white or yellow onion, finely diced jalapeño or serrano peppers, cilantro, tomato sauce, lime juice, and seasoned with salt and black pepper. The salsa is a vibrant, chunky mix with a balance of acidity, heat, and brightness, suitable for serving immediately or refrigerated for a few days.

Description

This Pico De Gallo (Salsa Fresca) recipe uses medium diced Roma tomatoes, diced white or yellow onion, and finely diced jalapeño or serrano peppers for a mildly spicy kick. Adding minced cilantro introduces fresh herbaceous notes, while tomato sauce and lime juice contribute tang and slight acidity. Seasoning with kosher salt and fresh ground pepper enhances the overall flavor balance.

The salsa remains chunky rather than pureed, preserving the texture of the fresh vegetables. It can be served immediately to maintain crispness or refrigerated in an airtight container. The acidity of lime juice helps preserve the flavors and freshness for a short period.

It pairs well as a condiment for Mexican dishes, tacos, grilled meats, or as a fresh dip with chips. The salsa is best consumed within three days to ensure peak flavor and texture.
