Autumn Avocado Toast

This Autumn Avocado Toast features smashed avocado spread on toasted bread, topped with thin pear slices, crumbled gorgonzola, and toasted cinnamon walnuts, all drizzled with honey. The nutty flavor of toasted walnuts pairs with the creamy avocado and the tangy bite of blue cheese, accented by the sweetness of pears and honey. The toasted bread adds a pleasant crunch, making a textured, layered toast that provides a balance of sweet, savory, and creamy notes.

Description

Autumn Avocado Toast combines ripe avocados mashed with salt and pepper, spread over toasted bread as a base for fresh, thin pear slices and crumbled gorgonzola cheese. The topping of walnuts toasted with cinnamon adds warmth and crunch, offering a nutty aroma that complements the other ingredients. Finally, a generous drizzle of honey ties together the flavors by adding a sweet finish. The result is a toast that balances creamy, crunchy, sweet, and tangy elements, making it flavorful yet straightforward to prepare.

Each component contributes distinct texture and taste, from the soft and creamy avocado to the crispness of pear and toast, and the slight pungency of gorgonzola. Toasting walnuts with cinnamon enhances their flavor and prevents any raw bitterness, while the honey adds moisture and sweetness to the ensemble.

This toast works well as a morning or midday snack, or a light meal when paired with a salad or soup. It can also be served as a simple appetizer or snack during fall months, highlighting seasonal ingredients like pears and warming spices.

Ingredients

Servings
  • 1/4 cup walnuts
  • 1/8 teaspoon cinnamon
  • 2 avocado smashed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 lices bread toasted
  • 1 pear thinly sliced
  • 2 tablespoons honey drizzled
  • 2 tablespoons gorgonzola cheese crumbled

Instructions

  1. Add the walnuts and cinnamon to a small saucepan over medium-low heat and toast until golden and fragrant, about 2 to 3 minutes. Make sure to stir and shake the pan so the nuts don’t burn – you want them golden in color and nutty-smelling. You can break them apart a bit before or after toasting to make it easier to sprinkle them on top.
  2. Smash the avocado in a bowl with the salt and pepper. Spread it on the toast and layer the pear slices and gorgonzola on top of the avocado, followed by the cinnamon walnuts. Drizzle the entire thing generously with honey. EAT!
