Avocado and Herb Salad ~ a super easy vegan salad made with delicious avocado and loads of bright fresh herbs!

Ingredients

Servings
  • 2-3 avocado ripe but firm
  • 1 lemon
  • 3 green onions thinly sliced
  • 2 Tbsp capers
  • 1 jalapeno pepper minced (leave out seeds and membrane for a milder heat)
  • cilantro stems removed and rough chopped, a large handful, fresh
  • parsley stems removed and rough chopped, a large handful, fresh

dressing

  • 1/4 cup extra virgin olive oil
  • 3 Tbsp orange blossom vinegar red or white, or your favorite vinegar
  • 1 clove garlic minced
  • salt fresh cracked
  • black pepper fresh cracked

Instructions

  1. Slice the avocado into thin slices and sprinkle with lemon juice to prevent browning.
  2. Add them to a wide shallow serving bowl along with the green onions, capers, herbs, and jalapeño.
  3. Whisk the dressing together and drizzle over the salad. Serve asap with a fresh grinding of coarse black pepper.
