Avocado Caprese Salad
Description
This salad blends peppery arugula with juicy tomato slices and creamy avocado to create a varied texture base. Fresh mozzarella slices add mild, soft dairy richness, while torn basil leaves contribute an aromatic, slightly sweet herbal note. The dressing is made by whisking extra virgin olive oil with balsamic vinegar and a pinch of sugar or honey, then seasoning with kosher salt and pepper, which enhances the salad's vibrant flavors.
The combination balances creaminess from the avocado and cheese with acidity from the balsamic and freshness from the herbs and greens. Tossed gently to coat, this salad makes a light, fresh starter or side dish.
Ingredients
- 2 cups arugula fresh
- 2-3 campari tomatoes sliced, or cocktail style tomatoes
- ½ avocado , pitted and sliced
- 3 lices mozzarella cheese fresh
- basil fresh leaves
- 1 tablespoon extra virgin olive oil , (I prefer the fruitiest, lightest flavored)
- 1 ½ teaspoons balsamic vinegar
- sugar generous pinch, or dollop of honey
- salt Kosher salt and freshly ground
- black pepper Kosher salt and freshly ground
Instructions
- Assemble the arugula, tomato, avocado slices and mozzarella in a serving bowl. Top with torn or slivered basil leaves. Whisk the extra virgin olive oil in a small bowl with the balsamic vinegar, sugar or honey and season with kosher salt and freshly ground black pepper to taste and pour over the salad. Toss to coat and serve.
