Avocado Caprese Salad

Ingredients

  • 8 ounces mozzarella cheese Galbani Fresh Mozzarella Salad Balls
  • 2 avocado chopped, ripe
  • 1 cup grape tomato halved, or cherry tomato
  • 1/4 cup basil roughly chopped, fresh leaves
  • 2 tablespoons basil pesto (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic minced
  • 2 tablespoons balsamic glaze (see notes)
  • salt (to taste)
  • black pepper to taste

Instructions

  1. To a salad bowl, add Galbani fresh mozzarella salad balls, avocado, tomatoes, and fresh basil.
  2. In a small bowl, whisk pesto, olive oil, garlic, balsamic glaze, and a light sprinkle of salt and pepper.
  3. Drizzle salad with balsamic dressing mixture and gently stir to combine. Taste and adjust salt and pepper, if needed.

Notes

  • To make your own balsamic reduction (balsamic glaze): Combine 1/2 cup balsamic vinegar and 1 tablespoon honey or sugar to a small saucepan. Bring to a boil then reduce and simmer on low heat for 10-15 minutes or until the sauce coats the back of the spoon. Allow it to cool before adding to the salad.
