Avocado Chicken Salad with Chipotle and Lime

Avocado Chicken Salad with Chipotle and Lime blends shredded chicken with a creamy dressing of yogurt, mayonnaise, chipotle pepper, and lime juice, accented by fresh green onions and topped with chopped avocado. The salad offers a smoky, tangy flavor profile with a creamy yet fresh texture, ideal for sandwiches or salads.

Description

This chicken salad features shredded cooked chicken mixed with thinly sliced green onions and a dressing combining plain Greek yogurt, mayonnaise, diced chipotle pepper in adobo sauce, and fresh lime juice and zest. The combination provides balanced creaminess with a smoky heat from the chipotle and bright citrus notes from the lime.

The chopped avocado added right before serving adds richness and a contrasting soft texture. This mixture can be prepared in advance and refrigerated, making it convenient for quick meals. Serving options include on toast, in lettuce cups, with crackers, or as a salad topping.

Ingredients

Servings
  • 1 1/2 cups cooked, shredded chicken
  • 3 green onion thinly sliced
  • ¼ cup yogurt plain, Greek
  • ¼ cup mayonnaise
  • 1 chipotle pepper in adobo sauce diced
  • 1 tablespoon adobo sauce from the can of chipotles
  • 1 ½ tablespoons lime juice freshly squeezed
  • ½ teaspoon lime freshly grated zest
  • salt kosher salt
  • black pepper kosher salt
  • 1 avocado chopped
  • onion for topping, pickled

Instructions

  1. Place the chicken in a large bowl with the green onions.
  2. In a small bowl, whisk together the yogurt, mayo, chipotle, adobo sauce, lime juice and zest with a big pinch of salt and pepper.
  3. Pour the dressing over the chicken mixture and toss well. Combine and stir until every bit is covered. Taste and season with more salt and pepper as needed.
  4. This mixture stays great in the fridge for a few days if you make it ahead! Right before serving, stir in 1 chopped avocado.
  5. Serve with toast, on crackers or chips, in lettuce cups or on salads. I love to serve with pickled onions on top for even more crunch!
