Avocado Chickpea Tuna Salad
Description
The Avocado Chickpea Tuna Salad brings together shelf-stable and fresh ingredients to create a satisfying meal or side dish. Canned tuna provides protein along with chickpeas adding a firm texture and subtle earthiness. The diced avocado introduces creaminess that contrasts with the slight crunch of the onion and the herbaceous note from parsley. A bright vinaigrette made from lemon juice, champagne vinegar, Dijon mustard, olive oil, and honey coats the mixture, lending tang and subtle sweetness. Freshly ground salt and black pepper adjust the seasoning to taste.
The preparation is straightforward: combine the salad ingredients, whisk together the vinaigrette, toss everything, and serve immediately. Because the avocado may brown and the salad is freshest at this point, it is best eaten within two days if stored.
