Description

This dip begins with dicing fresh ingredients: ripe avocados, cherry tomatoes, jalapeño, red onion, and finely chopped cilantro. The vegetables are combined and tossed with the juice of two limes, cultured oil, red wine vinegar, salt, and a choice of seasoning such as Chile Lime or Everything but the Elote to add dimension and a slight spice. The ingredients are gently mixed to coat without mashing the avocado, preserving some texture.

Feta cheese is folded in last, adding a salty tang that complements the citrus and avocado creaminess. The dip is best served fresh with tortilla chips, offering a balance of creamy, tangy, spicy, and herbaceous notes.

To prepare ahead, all ingredients except avocado can be combined and refrigerated for up to five days. Adding avocado just before serving prevents discoloration and keeps the dip visually appealing and fresh tasting.

  • 2 avocado large
  • cup cherry tomatoes diced
  • ¼ cup red onion
  • 2 tbsp cilantro chopped
  • 1 jalapeño small
  • ½ cup feta cheese
  • 1 ½ tbsp cultured oil Zero Acres
  • 1 tsp red wine vinegar
  • 2 lime juiced
  • 1 tsp salt
  • 1 tsp SEASONING Chile Lime or Everything but the Elote

Instructions

  1. Prep ingredients: First dice jalapeño, onions, and cilantro into small pieces. Finely dice cilantro. Remove the pits from the avocados and dice into small pieces as well as the tomatoes into quarters.
  2. In a mixing bowl, add diced avocado, tomatoes, jalapeños, red onion, and cilantro.Top with the juice of 2 limes, cultured oil, red wine vinegar, salt, and other seasoning.
  3. Toss together using a rubber spatula being careful not to mash up the avocado too much.
  4. Sprinkle feta cheese into the mixing bowl and toss lightly.
  5. Serve with tortilla chips and enjoy!

  • Use a vegetable chopper or pizza cutter to finely dice jalapeño, onion, and cilantro for even texture.
