Avocado Deviled Eggs

Avocado Deviled Eggs blend classic hard-boiled egg yolks with mashed avocado, lime juice, Dijon mustard, and optional Greek yogurt for a creamy filling. The mild richness of avocado pairs with the tang from lime and mustard, creating a smooth, brightly flavored filling that is piped or spooned into egg whites. Garnished with chives and paprika, these deviled eggs offer a fresh variation on the traditional recipe.

Description

Hard-boiled eggs are prepared by cooking in boiling water for 13 minutes, then cooled in an ice bath and peeled. Egg yolks are removed and combined with ripe avocado flesh, lime juice, Dijon mustard, salt, and pepper. Greek yogurt can be added optionally for a creamier texture and easier piping. The mixture is mashed until smooth and then refilled into the egg white halves using a spoon or piping bag. Garnishes of finely chopped chives and a sprinkle of paprika add color and mild flavor contrast.

The creamy avocado provides healthy fats and smooth mouthfeel, while the lime juice adds acidity to balance richness. This recipe suits appetisers, brunch dishes, or snack plates where a twist on classic deviled eggs is welcome.

Acidity for the filling can be varied by substituting lime juice with other vinegars if preferred. The recipe also suggests seeking a specialized deviled egg tray for transport to potlucks or gatherings to maintain presentation.

  2. While eggs are boiling, prepare an ice bath by adding ice cubes and cold water to a large bowl and set aside. After 13 minutes, remove the eggs from the pot using a skimmer and place them in the ice bath
  3. Once the eggs have cooled completely, peel them and set aside.

  1. Slice the eggs in half lengthwise. Remove the yolks using a small spoon and place in a medium sized mixing bowl. Set the whites aside.
  2. Add the flesh of 1 avocado, 1 teaspoon of lime juice, 1 teaspoon of Dijon mustard, and ⅛ teaspoon each of salt and pepper into the mixing bowl with the yolks. You can also add 1 tablespoon of Greek yogurt if you want a creamier consistency. Mash the yolks and combine well with other ingredients until the mixture is smooth.
  3. Use a spoon or a piping bag to fill the whites with the yolk mixture. Garnish with chives and paprika or even pickled onions!

Notes

  • Adding Greek yogurt or mayonnaise can make the filling creamier and easier to pipe but is optional.
  • Lime juice pairs well with avocado, but vinegar can be substituted depending on preference.
  • Consider using a deviled egg carrying tray for transporting the dish to maintain shape and presentation.
