Avocado Egg Salad

Avocado Egg Salad blends creamy diced avocado with hard-boiled eggs, mayonnaise, Dijon mustard, and lemon juice for a smooth, flavorful salad. Fresh chives and parsley bring subtle herbaceous notes, while seasoning with salt and pepper rounds out the savory taste. The avocado provides richness and moisture without overpowering the delicate egg texture, making it a balanced, vibrant salad ideal for immediate serving.

Description

The Avocado Egg Salad combines ripe avocado mashed with mayonnaise, Dijon mustard, and lemon juice. Hard-boiled eggs chopped into pieces add substance and protein, complemented by thinly sliced chives and chopped parsley to add freshness. Salt and black pepper season the salad to taste. The creamy avocado provides a gentle, buttery texture that works well with the firmness of the chopped eggs.

The salad is best served promptly after preparation to enjoy the avocado's bright color and creamy texture before it begins to discolor. This fresh, herb-infused egg salad suits sandwiches, wraps, or as a side dish.

Using a ripe avocado is important to achieve the right creaminess and flavor balance. The lemon juice not only adds brightness but also slows the browning of the avocado somewhat, though the salad is still best enjoyed immediately.
