Description

Fresh parsley, chives, basil, and garlic are pulsed together then combined with ripe avocado, lemon zest and juice, apple cider vinegar, salt, pepper, and water to achieve a desired creamy consistency. The result is a vibrant green dressing with fresh herbal notes and a mild acidity from the lemon and vinegar. The avocado provides richness without added oil.

This dressing works well drizzled over salads or as a dip for vegetables and raw snacks. Adjusting the water content lets you customize thickness for different uses.

Store the dressing in an airtight container in the refrigerator for up to four days. The acidity helps prevent browning, eliminating the need for oil layers or extra lemon juice typically used to preserve avocado-based mixtures.

  • 2 cups parsley About half of a large bunch, chopped, fresh
  • ¼ cup chives chopped fresh
  • ¼ cup basil About 10 to 12 leaves, fresh
  • 2 cloves garlic peeled
  • 1 medium/large avocado ripe
  • lemon zest from half, optional
  • ¼ cup lemon juice fresh
  • 1 ½ tablespoons apple cider vinegar
  • up to 1 teaspoon salt fine sea salt
  • ½ teaspoon black pepper or more to taste
  • ¼ to ½ cup water

Instructions

  1. In a food processor combine the parsley, chives, basil, and garlic, and blend until chunky, about 5 seconds.
  2. Slice the avocado, and scoop the flesh into the food processor. Add the lemon zest and juice, vinegar, ¾ teaspoon salt, pepper, and ¼ cup water. Process until as smooth as you like. For a thinner consistency add water 1 tablespoon at a time.
  3. Taste and adjust salt, pepper, and lemon, as desired. Serve right away, or store in an airtight container until ready to use. See Notes for storage tips.

Notes

  • Refrigerate the dressing in a sealed container for up to 4 days to maintain freshness and color.
  • The lemon juice and apple cider vinegar act as natural preservatives to slow browning without added oil.
  • If a thinner consistency is desired, add water gradually to adjust after blending.
  • Consumption within a couple of days is typical, as avocado flavor is freshest then.
