Avocado Lime Dressing
Description
This dressing starts by mashing or pureeing ripe avocado with lime juice to prevent browning and create a smooth base. The addition of Greek yogurt or sour cream adds tang and creaminess, while olive oil and minced garlic contribute richness and savory notes. Onion powder and fresh parsley enhance the herbal profile, balanced with salt and pepper for seasoning.
Milk is stirred in to adjust thickness, yielding a versatile dressing that can coat salads or serve as a creamy dip. Refrigeration allows the flavors to harmonize while maintaining a vibrant green color when stored properly.
The recipe is flexible for those without a food processor, as thorough mashing with a fork can produce an adequately smooth texture. Covering the dressing surface tightly helps prevent oxidation and color change. Consumption within a few days of preparation is recommended to enjoy freshness.
Ingredients
- 1 avocado
- 2 tablespoons lime juice fresh
- ½ cup yogurt or sour cream, plain, Greek
- 1 tablespoon olive oil
- 1 clove garlic minced
- ¼ teaspoon onion powder
- 1 tablespoon parsley chopped, fresh
- ¼ teaspoon salt more to taste
- ¼ teaspoon black pepper
- ⅓ cup milk or as needed
Instructions
- Cut the avocado in half and remove and discard the pit.
- Add the avocado and the fresh lime juice to a food processor. Pulse until the mixture is smooth. If you don't have a food processor, use a fork to mash until very smooth.
- Add Greek yogurt or sour cream, olive oil, garlic, onion powder, parsley, salt, and pepper. Pulse until all ingredients are well combined.
- Whisk in milk as needed to reach the desired consistency. If you prefer a thinner consistency, add more milk.
- Transfer the dressing to a jar and refrigerate for at least 30 minutes before serving.
Notes
- Use a food processor or blender for a smooth, creamy dressing; alternatively, mash avocado finely with a fork.
- To keep the dressing bright green, cover with plastic wrap pressed directly onto the surface before refrigerating.
- Store the dressing in the refrigerator for up to 3 days to maintain freshness and flavor.
