Avocado Reindeer Brownies
Description
This recipe uses ripe avocado puréed with plant-based milk, light brown sugar, and vanilla to create a smooth batter combined with cocoa powder, all-purpose flour, baking powder, and salt. Baking in a square pan at 350°F for about 15 minutes yields brownies that have cooked edges and a still slightly soft, fudgy center.
Once cooled, the brownies are cut into triangular shapes and decorated using writing icing to adhere candy eyes, pretzel antlers, and red candies for the noses, forming playful reindeer faces. This decorative step adds a seasonal and whimsical touch to the rich chocolatey base.
The brownies’ texture is moist yet tender, thanks largely to the avocado’s fat content substituting for traditional butter or oil. The combination of chocolate and smooth avocado makes these brownies both indulgent and unique in moisture and mouthfeel.
Ingredients
- 2 avocado ripe
- ½ cup plant-based milk soy, almond etc, vegan
- ¾ cup light brown sugar 140 g
- 1 teaspoon vanilla
- ½ cup all-purpose flour 60g
- 7 tablespoon cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
To decorate
- 1 writing icing or mix icing sugar with a little water, tube
- Candy eyes available in the baking aisle of most major grocery stores
- pretzels
- Red candy M&Ms and Smarties work well
Instructions
- Preheat the oven to 350F / 175C. Grease an 8” / 20cm square baking tray or line it with baking paper.
- Add the avocado flesh, milk, brown sugar and vanilla to a food processor and whiz until smooth, scraping down the sides if necessary.
- Add the flour, cocoa powder, baking powder, vanilla and salt and pulse until combined, but don’t over mix.
- Spoon the batter into the pan and spread evenly to the edges. Bake for 15 minutes or until the edges are cooked and the centre is still a little squidgy.
- Allow to cool completely in the tray.
- Cut the cooled brownies into triangles, then decorate like reindeers with the candy eyes, pretzels and red sweets, using the writing icing to ‘glue’ them on.
