This avocado salad recipe is an easy avocado recipe and a perfect as a side dish, or add some protein to make it a full meal!

Ingredients
- 3 avocados diced
- 1 purple onion diced
- 1 pint cherry tomatoes sliced, see note
- ⅓ cup olive oil
- 1 lemon juiced, see note
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Combine avocados, tomatoes, and onion.
- Drizzle olive oil and lemon juice over the salad.
- Season with salt and pepper, to taste.
- Stir until well mixed.

Notes
- If the cherry tomatoes are large, slice them in half. If they are smaller, feel free to leave them whole.
- Use as much lemon juice as you like, I like it tart and use 1 ½ lemons. You can also use 1 lemon and 1 lime.
