Ingredients

Servings
  • 2-3 avocado
  • 1/2 English cucumber
  • 2 Roma tomato
  • 1/4 red onion
  • 3/4 teaspoon salt plus more to taste
  • black pepper freshly cracked
  • cotija cheese or Feta
  • cilantro freshly chopped, for garnish

For the Lime Cilantro Dressing:

  • 1/4 cup olive oil
  • lime juice juice of 1 lime (1 tablespoon+
  • 1/2 jalapeno pepper
  • 1 garlic clove
  • 10-15 prigs cilantro
  • 1/2 teaspoon salt
  • black pepper freshly cracked

Instructions

  1. Give the cucumber, cilantro and tomatoes a good rinse.
  2. Finely chop 1/2 English cucumber, 2 Roma tomatoes, 1/4 red onion, and the flesh of 2-3 avocados.  (I used 3 smaller avocados).
  3. Add to a mixing bowl along with 3/4 teaspoon salt and some freshly cracked black pepper.  Combine well and take a taste.  This will give you an idea of how much dressing you'll need.
  4. Add 2-3 tablespoons Lime Cilantro Dressing (or more) and mix well.
  5. Top with a sprinkling of Cotija cheese and freshly chopped cilantro.   Serve immediately.
  6. For the Lime Cilantro Dressing, add 1/4 cup olive oil to a blender or food processor along with the juice of 1 lime, 1/2 jalapeno pepper, 1 garlic clove, 10-15 sprigs cilantro, 1/2 teaspoon salt, and some freshly cracked black pepper.    Combine well.

Notes

  • I think this dish tastes best with just a hint of dressing so I only added 2-3 tablespoons of the Lime-Cilantro Dressing, but you are welcome to add more if it doesn't seem like enough.
  •
  • Sometimes the Lime-Cilantro Dressing needs a little tweaking to find the right balance between the oil and the lime juice.  If it’s too tart for your taste, add a bit more oil.  If it’s too oily for your taste, add a bit more lime juice.
