Description
This recipe uses fresh squid cut into thin rings that are thoroughly dried to ensure the flour coating adheres properly. The squid is tossed in a simple mixture of flour, garlic powder, salt, and pepper, which imparts mild seasoning without overwhelming the squid's natural flavor. The frying temperature is carefully maintained at 350°F to quickly cook the calamari, keeping the exterior lightly crisp and pale rather than dark or heavy.
After frying, the calamari is drained on a cookie sheet without paper towels, which prevents steaming and preserves the crisp exterior. Serving with lemon wedges adds a fresh, acidic contrast that complements the delicate seafood taste.
Ingredients
- canola oil for frying
- 1 pound squid cut in 1/4 inch rings and dried with a paper towel, clean bodies
- 2 cups flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/8 teaspoon black pepper coarse ground
- 1 lemon cut into wedges
Instructions
- In a large pot or dutch oven add three inches of oil and bring to 350 degrees.
- Add the flour, salt, garlic powder and pepper to a large bowl and stir to combine.
- Toss the squid pieces in the flour then into the hot oil.
- Fry the squid for 1-2 minutes. You want the color to stay pale like in the pictures.
- Remove to a cookie sheet to drain (do not add paper towels as it will steam the calamari and make it soft.)
- Serve with lemon wedges.
