Ingredients
- 2 cup dry pasta any type, uncooked
- 1 avocado halved, seeded and peeled, ripe
- 1/4 cup olive oil
- 1/4 cup Parmesan Cheese or romano cheese, grated
- 1/4 cup basil I used basil and cilantro and it was amazing!, fresh leaves; or cilantro or parsley
- 2 cloves garlic
- 2 tablespoons lemon juice or lime juice
- salt to taste, freshly ground
- black pepper to taste, freshly ground
Instructions
- Cook your pasta according to the package. Drain well.
- While the pasta is cooking, place the avocado, olive oil,parmesan cheese, garlic, cilantro, and lime juice in a blender or food processor and blend well. You can leave it chunky or process it until it's creamy.
- Toss the pasta with the avocado sauce. Season with salt and pepper to taste and top with parmesan or romano cheese, if desired. Enjoy!
