Description
Avocado Shrimp Bites feature jumbo shrimp marinated in a blend of sweet chili sauce, lime juice, smoked paprika, salt, and black pepper, which infuses the seafood with a gentle spice and tang. After a one-hour marinade, the shrimp are sautéed briefly with butter and olive oil until just turning pink, keeping them tender and juicy. The shrimp are then served on cucumber slices spread with freshly made guacamole, creating a cool contrast to the warm shrimp. The cucumber adds crispness and freshness, while the guacamole provides creamy richness.
The combination of textures—from the creamy avocado and firm shrimp to the crunchy cucumber—makes these bites appealing as a light snack or appetizer. The use of homemade guacamole and fresh lime juice gives a bright, balanced flavor profile. Preparing the guacamole just before assembly prevents browning and preserves its vibrant green color.

Ingredients
- 1 pound Shrimp peeled, deveined and tails off, jumbo
- 1 English cucumber sliced, large
- 1 guacamole homemade, batch
- ¼ cup sweet chili sauce sugar-free
- 1 tablespoon lime juice
- 2 teaspoons butter
- 2 teaspoons olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper ground
Instructions
- Add the shrimp, chili sauce, lime juice, smoked paprika, salt and ground black pepper to mixing bowl.
- Toss to combine, then cover with plastic wrap and marinate in the fridge for 1 hour.
- Prepare the Homemade Guacamole right before you are ready to sauté the shrimp, otherwise it can start to oxidize and turn brown.
- Heat a skillet to medium high and add in the olive oil and butter. Once melted, add in the shrimp and sauté for about 2 minutes on each side or once they just start to turn pink. You don’t want to overcook the shrimp or they will become rubbery very quickly.
- While the shrimp is cooking, slice up your cucumber. Ideally you want the same number of slices as you have shrimp. I was able to get 24 in my batch.
- Take a slice of the cucumber and spread some of the guacamole on top.
- Add one shrimp on top of the guacamole and garnish with some chopped cilantro.
Notes
- The recipe yields about 24 bites; serving size is 3 bites per person.
- Prepare the guacamole right before assembling to keep it fresh and prevent browning.
- Avoid overcooking the shrimp; sauté them just until they start to turn pink to maintain tenderness.
- Match the number of cucumber slices to shrimp to create even, bite-sized servings.
