Ingredients

  • 2 avocado
  • 2 tsp lemon juice
  • salt to taste
  • black pepper to taste
  • 4 lices bread toasted
  • ½ cup feta cheese
  • 1 cup cherry tomato halved
  • ¼ cup basil
  • balsamic vinegar

Instructions

  1. Cut the avocado in half and put the flesh in a small bowl. Add lemon juice, salt, and pepper. With a fork, crush the ingredients together.
  2. Spread the mixture over the toast.
  3. Top with feta cheese, tomatoes, and basil.
  4. Season to your liking with salt and pepper.
  5. Pour a small trickle of balsamic vinaigrette on top.
