Avocado Toast

Classic Avocado Toast is a delicious filling and healthy breakfast or snack that's easy to customize and makes the perfect start to your day.

Ingredients

  • 1 avocado ripe
  • 1 teaspoon lemon juice
  • 2 lices French bread
  • 3 tablespoons butter unsalted
  • 2 large egg
  • 1/8 teaspoon red pepper flakes crushed
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper coarse ground

Instructions

  1. Add avocado and lemon juice to a bowl and mash.
  2. Add butter to a small skillet on medium heat.
  3. Brush some of the butter onto your two pieces of bread and put them in a toaster oven.
  4. Add the eggs to the skillet with the remaining butter in the pan.
  5. Cook over easy (you don't want to cook the yolk here at all) then remove from the pan carefully.
  6. Once the toast is done, spread the mashed avocado over the toast pieces.
  7. Top each slice of toast with a cooked egg.
  8. Sprinkle crushed red pepper flakes, salt and black pepper over both pieces of toast and serve.
