Description
Avocado Turkey Stuffed Sweet Potato is a hearty and flavorful meal combining tender baked sweet potatoes with a ground turkey filling that’s cooked with onions, red bell peppers, garlic, and spices such as cumin, garlic powder, oregano, and red chili flakes for mild heat. The filling simmers with diced tomatoes, adding moisture and slight acidity.
The sweet potatoes are baked until soft and fork-tender, then split open to hold the warm turkey mixture. Diced avocado and optional cheddar cheese added on top provide creamy richness and a mild melting finish. The balance of sweet, savory, and spicy components creates a satisfying texture contrast.
This dish can be adapted to use an Instant Pot for quicker sweet potato cooking. It works well as a filling dinner or meal prep option, delivering protein, vegetables, and complex flavors in one dish.
If preparing ahead, the turkey filling can be made in advance, and the stuffed sweet potatoes reheated gently before serving to preserve avocado freshness if added just before eating.
Ingredients
- 4 medium sweet potato
- 1 Tbsp. olive oil
- 1/2 cup onion white, diced
- 1/2 red bell pepper seeded and diced
- 2 cloves garlic minced
- 1 tsp. red pepper flakes chili
- 3/4 tsp. cumin ground
- 1/2 tsp. garlic powder
- 1/2 tsp. oregano dried
- 1/4 tsp. salt or more as desired
- 1, oz. (1 lb.) ground turkey
- 1, oz. can diced tomatoes petite, in juice
- 1 avocado halved, seeded, and diced
- 1/4 cup cheddar cheese optional, or white cheddar, grated
Instructions
- Preheat the oven to 400°F.
- Cook the sweet potatoes: pierce the sweet potatoes with a fork all over several times. Place on a baking sheet lined with aluminum foil; bake until soft and fork tender, about 45 minutes. (Or pierce with fork and cook in the microwave until soft & tender. I like to wrap mine in a paper towel. Cook time will vary based on size of the sweet potato but you can start with 10 minutes.)
- Heat the olive oil in a deep skillet over medium heat. Add in the onions, bell peppers and garlic; cook, stirring occasionally, until tender, ~5 minutes. Stir in the red pepper chili flakes, cumin, garlic powder, oregano and salt.
- Add the ground turkey; cook, stirring and breaking it up with a spoon, until no longer pink, ~3 to 5 minutes. Stir in the tomatoes. Reduce the heat to low; cover and cook for 10-15 minutes.
- Remove from heat. Slice the baked sweet potatoes lengthwise just until open. Fill with the turkey mixture. Top with cheese & avocado.
- Alternatively, you can scoop the sweet potato out into a bowl and build bowls instead of eating from the sweet potato itself. Enjoy!
Notes
- To speed up cooking, bake sweet potatoes in the microwave by piercing with a fork and microwaving 10 minutes or until tender.
- For Instant Pot preparation, cook sweet potatoes on high pressure for 15-20 minutes depending on size with natural pressure release.
- Adjust red pepper flakes to control spiciness to your taste.
- Serve immediately after assembling to keep avocado fresh and bright.
