Description

The recipe involves whisking together milk, egg, vanilla extract, and cinnamon to create a mildly sweet and spiced soaking liquid. Bread slices are dipped briefly to absorb some mixture without becoming soggy, then cooked in butter on medium heat until the bottoms are golden but not crisp, flipped and cooked similarly. After cooking, the toast is cut into smaller pieces or crust removed to ease eating for little ones.

Serving suggestions include fresh berries, banana slices, yogurt for dipping, and a drizzle of nut or peanut butter for added flavor and nutrition. For older toddlers, the dish can be accompanied by maple syrup as a topping or dip.   • 2 lices whole grain bread or any bread of choice
  • 1 large egg
  • 2 Tablespoons milk I use oat milk
  • ½ teaspoon vanilla extract
  • pinch cinnamon optional
  • ½ Tablespoon butter for cooking, or coconut oil
  • fresh berries for serving, banana in slices
  • banana
  • yogurt
  • peanut butter for drizzling, or another nut butter

Instructions

  1. Whisk together milk, egg, vanilla, cinnamon in a shallow bowl.
  2. Preheat a non-stick skillet on medium heat. Add butter.
  3. One at a time, dip bread and let excess egg mixture dip off.
  4. Once butter is melted, place bread slices in pan and cook for 2-3 minutes until the bottom side is golden brown, but not crisp. Flip bread and cook for another 2-3 minutes. Remove from pan and repeat the process with the second slice, unless you have enough room to do both at the same time.
  5. Let French toast cool and cut into 4 pieces. You can also cut off the crust for smaller babies.
  6. Serve with fresh berries, banana slices, a drizzle of nut butter (optional) and yogurt for dipping. If your toddler is old enough and you'd like you can also serve with maple syrup, as a drizzle or for dipping.
