- 10 oz Bacon cut into small pieces or pancetta

- 8 oz feta cheese crumbled
- 1 cup ricotta cheese or cottage cheese
- 8 oz cream cheese softened
- 3 egg
- ½ tsp salt

Instructions
- Heat olive oil in a sauté pan and add the pancetta pieces. Cook until it starts to brown, then remove from pan and set aside.
- In the same pan, sauteé the shallots or onion until caramelized (this should take about ½ hour or so).
- Preheat the oven to 375°F (190°C).
- Beat the eggs with the salt in a bowl and set aside.
- While the onions are cooking, place the three cheeses in a bowl and mix in the beaten eggs. Add the pancetta and caramelized shallots/onion and some freshly ground black pepper. Stir until well combined.
