Bacon and Rotel Cups
Description
Bacon and Rotel Cups feature mini phyllo dough shells filled with a blended mixture of drained mild Rotel tomatoes, cooked crumbled bacon, shredded Colby jack cheese, and mayonnaise. This combination yields a creamy and cheesy filling with a touch of mild tomato and pepper flavor from the Rotel. Once stuffed, the cups are baked at 350 degrees Fahrenheit until the phyllo becomes crisp and golden, typically taking 30 to 35 minutes, longer than some versions recommend, to ensure a crunchy texture.
The result is a rich and savory appetizer that balances crispy, flaky shells with a creamy, cheesy interior accented by smoky bacon. These cups can be served warm or at room temperature, fitting well as party snacks or casual appetizers. Their individual size makes them convenient for serving and eating.
The original recipe suggests starting to check for doneness at 15 to 20 minutes, but extending the baking time up to 35 minutes can provide a preferable crispy edge on the phyllo shells without compromising the filling's moistness. Ensuring the Rotel is mostly drained is important to avoid sogginess in the cups.
Ingredients
- 45 phyllo dough thawed (3 packages, mini shells
- 1 can ROTEL drained almost all the way, mild
- 1 cup Bacon cooked and crumbled
- 1 ½ cups Colby jack cheese shredded
- 1 cup mayonnaise
Instructions
- Preheat oven to 350 degrees F. Place phyllo shells on a baking sheet lined with a silicone mat or parchment paper.
- In a large bowl, mix together the Rotel, bacon, and mayonnaise until blended.
- Add in the cheese and stir until completely mixed together.
- Fill the phyllo shells with the bacon/rotel mixture.
- Bake for 30 to 35 minutes. Remove from the oven and serve warm or at room temperature.
Notes
- Begin checking the cups at 15 to 20 minutes, but baking for 30 to 35 minutes gives a crispier phyllo texture preferred by many.
- Drain most of the liquid from the Rotel tomatoes to prevent the filling from making the shells soggy.
- Serve these cups warm or at room temperature for the best texture contrast between crispy shells and creamy filling.
