Bacon Breakfast Burrito

The Bacon Breakfast Burrito includes fluffy scrambled eggs, crispy bacon, and melted cheddar or pepper jack cheese wrapped inside a large flour tortilla and drizzled with homemade chipotle aioli. The burrito is lightly grilled to seal it and add a slight crispiness. This hearty and flavorful breakfast option combines smoky bacon and creamy scrambled eggs with a spicy and tangy sauce.

Description

This recipe starts by preparing the chipotle aioli made from mayonnaise, lemon juice, chipotle adobo sauce, garlic powder, cayenne pepper, and salt to add a smoky and spicy element. Bacon is cooked until crisp and chopped. Eggs are scrambled with olive oil or butter and seasoned with salt and pepper. Large flour tortillas are warmed briefly for flexibility, then filled with eggs, bacon, cheese, and drizzled with the chipotle aioli.

Each burrito is folded and rolled tightly, then cooked seam-side down in a pan with a little oil until browned on both sides. This cooking step helps seal the burrito and adds a slight crisp texture to the tortilla.

The burritos are well-suited to a filling breakfast or brunch. The combination of smoky bacon, soft eggs, melted cheese, and spicy aioli gives a complex flavor. Homemade aioli can be stored for condiments or extra drizzling.

Nutrition information is estimated and may vary depending on exact ingredients used, especially the amount of chipotle aioli added.

Ingredients

Servings
  • 6 egg
  • 2-3 tsp olive oil or as needed, or butter
  • 4 oz cheese cheddar, pepper jack, mex blend, grated
  • 4 lices Bacon (cooked until crispy)
  • 4 flour tortilla large "burrito-sized"
  • chipotle aioli for drizzling, see below
  • salt to taste
  • black pepper to taste

Easy Homemade Chipotle Aioli

  • ½ cup mayonnaise all-natural
  • ½ lemon (juiced)
  • 2 tsp chipotle adobo sauce or to taste
  • tsp garlic powder
  • 1/8-1/4 tsp ground cayenne pepper plus extra to taste
  • tsp salt

Instructions

  1. To make the chipotle sauce, whisk together ingredients and set aside. Recipe yields approx. 1/2 cup of sauce.
  2. Cook bacon via preferred method until crispy. Chop into bite-sized pieces and set aside.
  3. Whisk eggs. Heat a pan with oil/butter to medium heat, add eggs, and scramble until cooked through. Season with salt and pepper, to taste.
  4. Add eggs to a greased pan heated to medium heat and scramble until cooked through. Transfer cooked eggs to a large bowl.
  5. For easy burrito assembly warm each tortilla in the microwave for 20 seconds to steam it before filling/rolling since they're easier to fold when warm.
  6. For each burrito, warm tortilla and arrange eggs, bacon, and cheese in the center of each tortilla. Drizzle with chipotle aioli. Fold and roll until sealed. Place seam-side down.
  7. Ready to eat? Bring a pan to medium heat with a little oil to prevent sticking. Once the pan is hot, add the burritos, seam side down and cook for about 3 minutes each side or until burritos are hot in the center and golden on the outside! Serve with additional chipotle sauce. They're also great with salsa and sour cream. Enjoy!

Notes

  • The chipotle aioli adds smoky heat and can be adjusted to taste.
  • Warm tortillas briefly before assembling for easier rolling and folding.
  • Cook bacon until crispy then chop into bite-size pieces for even distribution.
  • Seal burritos well and grill seam-side down to maintain shape and add crispness.
  • Nutrition calculations do not include optional chipotle aioli; add about 75 calories per tablespoon if used.
