Bacon Brown Sugar Sloppy Joes
Description
This recipe begins by crisping thick-cut chopped bacon, then using the rendered fat to cook diced onion, garlic, and red bell pepper until softened. Ground beef is added and cooked on medium heat, broken into chunks roughly the size of small berries instead of finely crumbled, which helps maintain texture and sandwich stability. Paprika, tomato paste, tomato sauce, and brown sugar enrich the sauce with smoky and sweet flavors.
The mixture simmers until the sauce reduces and thickens into a “sloppy” texture that holds shape without spreading excessively when spooned. The reserved cooked bacon is added back in for extra savory depth. Toasted brioche rolls provide a soft but sturdy base to hold the rich filling, and optional additional bacon slices and brown sugar can top the sandwiches to add crunchy texture and a sweet finish.
This combination of smoky, sweet, and savory notes, combined with the tender beef chunks and crisp bacon, makes for a flavorful handheld meal. The method of cooking and sauce reduction ensures the filling is moist but not runny, suited for piling generously onto buns.
Ingredients
- 1/2 pound Bacon chopped, thick sliced
- 1 cup yellow onion diced
- 2 cloves garlic minced
- 1 red bell pepper chopped finely
- 1 1/2 pounds ground beef (85/15 fat content)
- 1 teaspoon paprika
- 2 tablespoons tomato paste
- 2 cups tomato sauce
- 1/4 cup brown sugar
- 4 brioche rolls
- Bacon optional, slices
- brown sugar optional
Instructions
- In a large skillet cook the bacon on medium high heat for 2-3 minutes or until crispy but still bendable.
- Remove the bacon from the pan and reserve about 2 tablespoons of the oil to cook the onion, garlic and red bell pepper.
- Once softened add in the beef, lower the heat to medium and cook well, breaking it apart but leaving some chunks about the size of a raspberry or small grape (don't crush the heck out of it, the larger crumbles will help give the sandwich stability).
- Cook until well browned (5-6 minutes), then add in the paprika, tomato paste, tomato sauce and brown sugar.
- Stir well, continue cooking until the sauce starts to evaporate and the mixture becomes "sloppy" (about 5-6 minutes).
- The consistency you are looking for is reduced enough that spoonfuls can be placed on top of each other with the bottom spoonful not spreading more than a half inch or so.
- Add the bacon back in.
- Toast the buns then spoon over the mixture and top with additional bacon and sprinkle of brown sugar (if desired).
