Bacon Buffalo Deviled Eggs

Bacon Buffalo Deviled Eggs blend creamy egg yolk filling with buffalo wing sauce, goat cheese, mayonnaise, and Greek yogurt for a tangy, rich flavor. Crisp cooked bacon adds texture and smoky notes. The filling is piped into halved hard-boiled eggs, garnished with sliced green onions to complement the spicy, creamy profile of this appetizer.

Description

This recipe starts with hard-boiling large eggs, then cooling and peeling them carefully to maintain smooth whites. The yolks are combined in a food processor with mayonnaise, Greek yogurt, soft goat cheese, buffalo wing sauce, Dijon mustard, garlic powder, salt, and pepper, creating a creamy, zesty filling. Cooked diced bacon is added for smoky crunch and texture.

The mixture is blended until smooth and the filling is spooned or piped back into the egg white halves. The eggs are then topped with sliced green onions which add a fresh bite to balance the spiciness and richness of the filling. The buffalo wing sauce provides a tangy heat that complements the creamy base and bacon.

Bacon Buffalo Deviled Eggs are suitable for parties or gatherings, offering a flavorful twist on classic deviled eggs with layered textures from creamy filling and crisp bacon pieces.

Ingredients

Servings
  • 2 lices Bacon diced
  • 12 egg large
  • 3 tablespoons mayonnaise
  • tablespoons  Greek yogurt 2% or full fat!, plain
  • 2 ounces goat cheese softened
  • 2 tablespoons buffalo wing sauce plus extra for drizzling
  • tablespoons  Dijon mustard
  • 1/8  teaspoon  garlic powder
  • ¼ teaspoon salt
  • 1/4  teaspoon  black pepper
  • tablespoons  green onion sliced

Instructions

  1. Heat a skillet over medium-low heat and add the bacon. Cook, stirring often, until the fat is rendered and the bacon is crispy. Cover a plate with a paper towel. Remove the bacon with a slotted spoon and place it on the paper towel to drain excess grease.
  2. To boil the perfect egg, place the eggs in a large pot and fill it with cold water. Bring it to a boil and let bubble for 1 minute, then turn off the heat and cover the pot. Let the pot sit for 15 minutes. After 15 minutes, place the pot in the sink and fill it with cold water to cool the eggs down immediately. You want the eggs to sit in cold water for 20 minutes or so, so you may need to dump the water and refill with cold water a few times. You can add some ice cubes too!
  3. After 30 minutes, peel the eggs and place them on a paper towel. Slice them in half and gently remove the yolks.
  4. Add the egg yolks, mayo, yogurt, goat cheese, buffalo wing sauce, mustard, salt, pepper and garlic powder to the food processor. Blend until smooth and creamy and mousse-like. You can taste and add additional salt if needed.
  5. Scoop out the mixture and spoon it (or pipe it with a pastry bag) into the open egg whites. Drizzle the eggs with more buffalo wing sauce (as much as you’d like!) and sprinkle with the fried bacon. Top with sliced green onions. Sprinkle with freshly cracked black pepper or smoked paprika.
  6. These can be made a few hours ahead of time, but I would wait to add the bacon on top until right before serving.
