Description

Ingredients

  • 8 ounce cream cheese light
  • ½ cup mayonnaise
  • 5 lices Bacon crumbled
  • 1 tablespoon scallions white part only
  • ½ teaspoon dill
  • ½ teaspoon black pepper
  • 1 cup almonds sliced

Instructions

  1. Blend cream cheese and mayo together
  2. Mix in the scallions, dill, pepper and bacon.
  3. Spread out a piece of plastic wrap and spoon to mixture onto it and fold the plastic wrap around the mixture.
  4. Form it into a ball.
  5. Refrigerate for at least 1-2 hours.
  6. Remove from wrap and roll in sliced almonds. I find it easiest to put the ball on a plate of almonds then turn it over to coat the other side. Then roll the sides.
  7. Serve with crackers.

Notes

  • Use chopped pecans instead of almonds for a different flavor and texture coating.
  • Roll the cheese ball in nuts only right before serving for the best crunch.
  • Store the cheese ball in an airtight container in the refrigerator; it keeps well for up to 14 days.
