Bacon Cheeseburger Bombs

Bacon Cheeseburger Bombs wrap a savory, seasoned ground beef and bacon mixture with cream cheese inside refrigerated biscuit dough, enclosing cheddar cheese cubes for a melty center. Once baked, the biscuit becomes golden and slightly crispy outside, with a hearty, juicy filling. The combination of smoky bacon, sharp cheddar, and creamy cheese base offers a rich, indulgent snack or appetizer.

Description

This recipe starts by browning ground beef, chopped bacon, and onion until cooked, then stirs in cream cheese and various condiments—ketchup, barbecue sauce, mustard, Worcestershire sauce—to make a flavorful filling. The creamy texture of the melted cream cheese blends with the savory meat and sauces. Cooling this mixture before assembly helps prevent the biscuit dough from becoming soggy.

Each biscuit is rolled thin, filled with about two tablespoons of the meat mixture plus a cube of cheddar cheese for gooey, stringy cheese once baked. The dough is wrapped tightly around the filling to seal in the juices. Egg white brushed over the biscuits creates a shiny surface, sprinkled with sesame seeds for a subtle nuttiness and added texture.

Baking at a moderate temperature browns the biscuits gently until lightly golden. Serving these warm ensures the cheese inside is melted and the meat filling remains juicy. They can function as convenient finger foods, party appetizers, or snack bites.

A useful substitution note is that if canned biscuits are unavailable, homemade biscuit dough can be used instead.

Ingredients

Servings
  • 1 (16.3 ounce each) can Biscuits refrigerated
  • 1 pound ground beef lean
  • ½ onion finely chopped
  • 3 lices Bacon chopped
  • cup cream cheese
  • 1 tablespoon ketchup
  • 2 tablespoons barbecue sauce
  • 1 teaspoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 5 ounces cheddar cheese cut into 10 cubes
  • 1 egg white
  • sesame seeds

Instructions

  1. Preheat oven to 375°F.
  2. In a large pan, brown ground beef, bacon and onion until cooked. Drain any grease.
  3. Add cream cheese, ketchup, barbecue sauce, mustard and Worcestershire sauce. Stir over low heat until cream cheese is melted. Allow to cool.
  4. Roll each biscuit out very thin. Place 2 tablespoons beef mixture on each biscuit and add 1 square of cheese. Wrap the biscuit around the beef/cheese and tightly seal the edges.
  5. Place biscuits on a parchment lined pan seam side down. Brush with egg white and sprinkle with sesame seeds.
  6. Put them in the oven and turn down the heat to 350°F. Bake 13-16 minutes or until lightly browned.
  7. Serve warm.

Notes

  • Be cautious when eating, as the filling will be very hot immediately after baking.
  • If canned biscuit dough is unavailable, homemade biscuits can be used as a substitute for the wrapping.
