Bacon Cheeseburger Sloppy Joes

Bacon Cheeseburger Sloppy Joes feature ground beef browned to develop crust, combined with crisp cooked bacon and sautéed onions. The mixture is thickened with a cornstarch and beef broth slurry and flavored with ketchup, mustard, Worcestershire sauce, salt, and pepper. Sharp cheddar cheese is folded in last, creating a rich, saucy filling served on brioche buns.

Description

This recipe starts by browning lean ground beef in a cast iron skillet, encouraging caramelization that adds flavor. Crisp bacon is cooked separately and crumbled. Onions are browned in the same skillet, then combined with the beef. A seasoned mixture of ketchup, mustard, Worcestershire sauce, and beef broth thickened with cornstarch is added, simmered until thickened but still moist. Crisp bacon pieces are folded back in along with chopped cheddar cheese, which melts gently, binding the filling.

The result is a hearty, savory sandwich filling that balances meatiness, smoky bacon, sharp cheese, and tangy condiments. The mixture can be spooned onto soft brioche buns for sandwiches with a juicy, cheesy texture.

Ingredients

Servings
  • 1 pound ground beef lean
  • 6 lices Bacon
  • 1 yellow onion diced, small
  • 3 tablespoons ketchup
  • 1 teaspoon mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper fresh ground
  • 1 tablespoon cornstarch
  • 1/2 cup beef broth
  • 6 ounces cheddar cheese chopped
  • 6 brioche hamburger buns

Instructions

  1. Add the ground beef to a large cast iron skillet (this browns very well) and brown until a deep brown crust appears before breaking the beef apart.
  2. Stir the ground beef and brown until a deep crust appears on about 50 or so percent of the beef.
  3. Remove the beef, drain the fat and add the bacon to the pan.
  4. Cook the bacon until crisp, then remove to cool and crumble.
  5. Add the onions to the pan
  6. Let brown for 1-2 minutes before stirring, then let brown for another 1-2 minutes before stirring again.
  7. Add the beef back into the pan.
  8. In a small cup mix the beef broth and cornstarch together
  9. Add the ketchup, mustard Worcestershire sauce, salt, black pepper, beef broth/cornstarch mixture into the pan.
  10. Cook until the mixture is only slightly liquidy (about 75% of the mixture is above liquid), 3-5 minutes.
  11. Add the bacon back into the pan and stir to combine.
  12. Turn off the heat, add in the cheddar cheese and fold into the meat with a spatula until just melted.
  13. Served on toasted brioche buns.
