  • 2 Tablespoons butter
  • 1 yellow onion diced, medium
  • 1/2 green bell pepper diced
  • 1/2 red pepper diced
  • 4 oz. cream cheese softened
  • 2 1/2 cups chicken broth
  • 1 1/2 cups half and half
  • 1 diced tomatoes with green chiles, 14.5 oz can
  • 1 cup corn frozen
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • salt to taste
  • black pepper to taste
  • 2 cups chicken cooked, chopped
  • 1 cup cheddar cheese shredded, sharp
  • 3-5 lices Bacon cooked and chopped

Instructions

  1. Melt butter in a large soup pot over medium-high heat. Add onion and peppers and cook until soft, about five minutes.
  2. Reduce heat to medium and stir in cream cheese, chicken broth, half and half, diced tomatoes, corn, cumin, garlic powder, and salt and pepper. Cook until cream cheese is melted and soup is heated through, about 10-15 minutes.
  3. Stir in chicken, cheddar cheese, and bacon. Simmer over low heat until ready to serve.
