  • 8 egg beaten, large
  • salt to taste
  • black pepper to taste
  • 4 lices Bacon halved, center cut
  • 4 heirloom tomato from 1, thin slices
  • 4 ounces avocado (1 small haas, sliced)
  • red pepper flakes (optional)

Instructions

  1. Prepare the bagels as instructed and let them cool.
  2. Heat a large nonstick skillet over medium heat, spray with oil.
  3. Scramble the eggs with salt and pepper until they just set. Set aside.
