Description

This casserole begins with cooking bacon until crisp and crumbling it for topping later. Frozen potatoes or hash browns form the base in a greased casserole dish. A whisked mixture of eggs, milk (or cream), salt, and black pepper is combined with diced canned green chilies and poured evenly over the potatoes.

Small pieces of softened cream cheese are distributed on top of the egg mixture so they retain some shape while baking, providing pockets of creamy texture. Sharp cheddar cheese is sprinkled over the entire casserole. It bakes at 350 degrees Fahrenheit for about 25 to 33 minutes until the center is fully cooked.

With around five minutes remaining, the bacon crumbles are sprinkled on top and the casserole returns to the oven briefly. Once baked, the dish rests for 10 minutes, allowing flavors to settle and making it easier to slice. The final dish combines creamy, cheesy richness with smoky bacon and tender potatoes, resulting in a hearty and filling dish suited for a crowd or meal prep.

  • 1 lb. Bacon (cooked until crispy)
  • 2 cups frozen potatoes or hash browns
  • 12 large egg
  • 1 cup milk or cream
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 ounces green chilies from a can, diced
  • 4 ounces cream cheese (softened and cut into small pieces)
  • 2 cups cheddar cheese sharp

Instructions

  1. Cook the bacon until crispy. A key tip is to cook the bacon until it is nice and crispy. This can be done in a skillet or in the oven at 400 degrees for about 20-24 minutes. Set aside on a towel-lined plate, blot, and crumble into pieces.
  2. Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick cooking spray.  Pour frozen potatoes or hash browns on the bottom of the pan. 
  3. In a bowl, whisk together eggs, milk, salt, and pepper until completely mixed together. Stir in green chilies. Pour egg mixture over potatoes. 
  4. Cut the cream cheese into small pieces and evenly space them into the egg mixture. This will allow the cream cheese to hold its shape and not completely melt when baked.
  5. Sprinkle with sharp cheddar cheese. Bake for 25-33 minutes or until the center is completely cooked. With 5 minutes left of baking time, remove the casserole from the oven, and sprinkle with crispy bacon. Return to oven to continue cooking.
  6. Remove from oven and let set up for 10 minutes before slicing.
