Bacon Egg and Cheese Egg Bites
Description
This recipe combines beaten eggs, cottage cheese, and hot sauce blended to smoothness, then mixed with cooked bacon pieces and grated cheddar before baking in a muffin pan set in a water bath. The gentle steaming in the oven ensures the egg bites cook uniformly and maintain moisture, resulting in tender, creamy centers with pockets of melted cheese and crisp bacon flavor throughout. The combination of sharp cheddar and slightly spicy hot sauce enhances the mildness of the eggs and cottage cheese.
These egg bites can be served warm, optionally accompanied by salsa, sour cream, and fresh cilantro for added brightness and contrast. They make for a satisfying breakfast that can be prepared ahead and reheated gently. The recipe is flexible to accommodate different vegetables or meats, allowing substitutions like bell peppers, onions, ham, or sausage to vary the flavor profile.
Using a water bath during baking is key for texture, so follow that step carefully. Letting the egg bites rest briefly after baking helps them set for easier serving.
Ingredients
- 6 large egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cottage cheese
- 1 teaspoon hot sauce (such as Tabasco or Tapatio)
- 5 lices Bacon (cut into small pieces and cooked)
- 1 cup cheddar cheese grated, sharp
Instructions
- Preheat oven to 300 degrees.
- Heat a large skillet over medium heat. Cut bacon into small pieces. Cook until crispy, about 8-10 minutes. Remove and set aside on a paper-towel-lined plate.
- In a blender, add eggs, salt, pepper, cottage cheese, and hot sauce. Puree until smooth.
- Spray a muffin tin with non-stick cooking spray. Pour egg mixture about 2/3 full. Sprinkle in bacon and cheese and stir using a spoon or butter knife.
- Carefully heat some water in the microwave. Carefully pour into a 9 x 13 pan. Place in the bottom rack of the oven. This is what will create steam in order to slowly temper and cook the eggs.
- Place the muffin tin on another oven rack. Bake for 20-23 minutes or until eggs are cooked through. Remove from the oven and let set up for 5 minutes before serving.
- Serve with salsa, sour cream, and fresh cilantro.
Notes
- You can substitute or add chopped vegetables like red peppers, onions, or broccoli for variety.
- Meat substitutes such as ham, sausage, or chicken can replace bacon depending on preference.
