Bacon Guacamole Recipe
Description
This Bacon Guacamole Recipe starts by roasting cherry tomatoes and unpeeled garlic cloves in olive oil until tender, developing a slightly sweet and smoky flavor. Crispy bacon cooked separately adds a salty, savory element. Ripe avocados are mashed together with salt, cumin, lime juice, and roasted garlic, creating a creamy and zesty base.
The mixture of most roasted tomatoes, bacon pieces, red onion, and cilantro is folded into the avocado mash, leaving some tomato and bacon reserved for garnishing the guacamole. This preparation results in a guacamole with a mixture of textures—from creamy avocado to chunky vegetables and crisp bacon.
Bacon Guacamole works well as a dip for chips or as a topping for tacos and grilled dishes. The roasting process and fresh herbs drive a complex flavor that pairs with many Mexican-inspired meals.
The recipe suggests roasting the tomatoes, garlic, and cooking bacon several hours in advance to streamline final assembly. Warming reserved bacon before topping improves its appearance by melting any residual fat.
Ingredients
- 3 cups cherry tomato cut in half
- 5 cloves garlic unpeeled
- 2 teaspoons olive oil
- 3 trips Bacon sliced into ½-inch pieces
- 3 avocado peeled and seed removed, ripe
- 1 teaspoon salt sea salt
- ½ teaspoon cumin
- ¼ cup lime juice from 2 limes
- ¼ cup red onion each, minced red onion
- ¼ cup cilantro each, minced red onion
Instructions
- Preheat your oven to 425 degrees.
- Toss the cherry tomatoes and unpeeled garlic cloves with the olive oil and place them on a baking sheet. Put them into your oven and roast for 30 minutes.
- While the tomatoes are roasting, cook the bacon until crispy in a large frying pan over medium-high heat.
- Add the avocados, salt, cumin, and lime juice to a large mixing bowl. Squeeze the roasted garlic out of their skins and add them to the bowl. Mix everything together until the avocados and roasted garlic are mashed well.
- Reserve a few roasted tomatoes and some bacon to garnish. Mix the remaining roasted tomatoes, bacon, red onion, and cilantro into the guacamole.
- Serve the guacamole topped with the reserved roasted tomatoes and bacon.
Notes
- Roast the tomatoes and garlic and cook the bacon ahead of time, storing them covered in the fridge.
- Warm the reserved bacon slightly before using it as a garnish to improve its appearance and texture.
