Bacon Jam
Description
Bacon Jam begins with cooking thick-cut bacon pieces over medium heat to release fat and crisp the meat. Sliced onions are added and sautéed until softened. Brown sugar is stirred in to introduce sweetness. Beef broth is gradually added in portions, with each simmered down to concentrate flavors and thicken the mixture incrementally. This slow reduction process intensifies the savory and sweet notes while creating a jam-like texture.
After the broth has all been incorporated and reduced, the mixture is blended briefly with honey, smoked paprika, and black pepper to maintain a chunky but spreadable consistency. Butter is stirred in last to add smoothness and richness.
Serve the bacon jam warm or chilled as a condiment to enhance sandwiches, burgers, or crackers. It stores refrigerated for up to two weeks, and warming before use helps restore spreadability.
Ingredients
- 1 pound Bacon cut into 2-inch pieces, thick cut slices
- 1/2 sweet onion sliced
- 1/3 cup brown sugar tightly packed
- 4 cups beef broth
- 2 tablespoons honey
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 2 tablespoons butter
Instructions
- Place the bacon into a large heavy skillet over medium heat. Cook until the fat has rendered, 10 to 15 minutes.
- Add in onion and saute until the onion is soft, about 5 minutes.
- Stir in the brown sugar.
- Pour in 1 cup of the beef broth. Simmer until the mixture has reduced and is thickened, about 10 minutes.
- Pour in another cup of beef broth. Simmer until the mixture has reduced, about 10 minutes. Continue this process until all the beef broth has been used.
- Transfer the bacon mixture to a blender. Add in honey, paprika, and black pepper. Blend for about 30 seconds. The mixture should be chunky, not smooth.
- Add in butter and stir until melted. Use immediately or transfer to an airtight container. Refrigerate for up to 2 weeks. Warm before using.
