Bacon Lentil Soup

This Bacon Lentil Soup combines the smoky falvor of bacon with the earthy flavor of lentils. It's also full of vegetables for a healthy yet filling meal.

Ingredients

  • 6 lices Bacon chopped
  • 1 onion diced, medium
  • 2 carrot diced
  • 2 celery diced, stalks
  • 3 cloves garlic minced
  • 1 teaspoon thyme dried
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 1 1/2 cups green lentils rinsed, or brown lentils; dried
  • 6 cups chicken broth or vegetable broth
  • 20 ounces diced tomatoes with chiles
  • salt to taste
  • black pepper to taste
  • parsley chopped (for garnish, fresh

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy.
  2. Remove bacon with a slotted spoon and set aside, leaving the drippings in the pot.
  3. Add the diced onion, carrots, and celery to the pot.
  4. Cook for about 5 minutes until softened.
  5. Stir in the minced garlic, dried thyme, smoked paprika, and bay leaf.
  6. Cook for another minute until fragrant.
  7. Add the rinsed lentils, chicken or vegetable broth, and diced tomatoes with their juice.
  8. Bring to a boil, then reduce heat to a simmer.
  9. Simmer uncovered for about 30-35 minutes, or until the lentils are tender.
  10. Remove the bay leaf. Season with salt and pepper to taste.
  11. Serve hot, garnished with the cooked bacon and chopped parsley.
