Ingredients
Bacon Maple Muffins
- 2 cups flour
- 3 tsp baking powder
- ½ tsp salt
- ½ cup vegetable oil
- ½ cup milk
- 1 egg
- ⅔ cup maple syrup
- ½ cup Bacon cooked, crumbled
Brown Sugar Crumble
- ⅓ cup brown sugar
- 2 tbsp flour
- ½ tsp cinnamon
- 1 tbsp butter cold, cubed
Instructions
- Preheat the oven to 350°F.
- Combine 2 cups flour, baking powder and salt in a small bowl.
- Combine the vegetable oil, milk and egg in a large mixing bowl.
- Whisk together, then add the maple syrup.
- Add in the flour mixture and combine well.
- Add the bacon to the batter.
- Mix the bacon in, then spoon the batter into paper lined muffin tins.
- Make the brown sugar crumble by combining the brown sugar, 2 tbsp flour and cinnamon in a small mixing bowl.
- Fold in the butter, then use your hands to mix into a coarse crumble.
- Sprinkle the brown sugar crumble on top of the muffins.
- Place in the oven and bake for 18 minutes.
Notes
- Use cooked bacon crumbles from the store or bake bacon slices in the oven at 400°F on a wire rack for 15-20 minutes, then crumble.
- To make mini muffins, use a mini muffin pan, fill liners ¾ full, and reduce baking time to 15 minutes.
- Store muffins in an airtight container at room temperature and consume within 5 days for best quality.
