Bacon Maple Muffins

  • 2 cups flour
  • 3 tsp baking powder
  • ½ tsp salt
  • ½ cup vegetable oil
  • ½ cup milk
  • 1 egg
  • cup maple syrup
  • ½ cup Bacon cooked, crumbled

Brown Sugar Crumble

  • cup brown sugar
  • 2 tbsp flour
  • ½ tsp cinnamon
  • 1 tbsp butter cold, cubed

Instructions

  1. Preheat the oven to 350°F. 
  2. Combine 2 cups flour, baking powder and salt in a small bowl.
  3. Combine the vegetable oil, milk and egg in a large mixing bowl.
  4. Whisk together, then add the maple syrup.
  5. Add in the flour mixture and combine well.
  6. Add the bacon to the batter.
  7. Mix the bacon in, then spoon the batter into paper lined muffin tins.
  8. Make the brown sugar crumble by combining the brown sugar, 2 tbsp flour and cinnamon in a small mixing bowl.
  9. Fold in the butter, then use your hands to mix into a coarse crumble.
  10. Sprinkle the brown sugar crumble on top of the muffins.
  11. Place in the oven and bake for 18 minutes.

Notes

  • Use cooked bacon crumbles from the store or bake bacon slices in the oven at 400°F on a wire rack for 15-20 minutes, then crumble.
  • To make mini muffins, use a mini muffin pan, fill liners ¾ full, and reduce baking time to 15 minutes.
  • Store muffins in an airtight container at room temperature and consume within 5 days for best quality.
