Description
The chicken breasts are dipped in melted butter before being coated in a mixture of finely crushed corn flakes combined with ranch seasoning, which provides a crispy, herb-spiced exterior. Seasoned with salt and pepper, the coated chicken is baked at 400°F until cooked through and crispy.
Once nearly finished, shredded cheddar cheese and crumbled cooked bacon are sprinkled on top and baked briefly to melt the cheese, adding rich flavor and a slightly gooey texture with the salty bite of bacon.
The dish is finished with chopped parsley for freshness and color, making it a satisfying main that pairs well with simple sides like steamed vegetables or salads.
Ingredients
- 4 chicken breast about 1.25 lbs total, boneless skinless
- 1/4 cup butter melted
- 1 1/2 cups corn flakes I use my food processor, crushed
- 2 tablespoons ranch seasoning mix shaker bottle, Hidden Valley Original brand
- cooking spray
- 1 cup cheddar cheese shredded
- 4 lices Bacon cooked and crumbled
- 1 tablespoon parsley chopped
- salt to taste
- black pepper to taste
Instructions
- Preheat the oven to 400 degrees. Coat a baking dish or sheet pan with cooking spray.
- Place the corn flakes and ranch seasoning on a plate and stir to combine.
- Place the butter in a small bowl. Dip each chicken breast in the butter then coat in the corn flake mixture. Season the tops of the chicken breasts with salt and pepper to taste.
- Place the chicken in the prepared dish. Bake for 35 minutes.
- Sprinkle the cheese and bacon evenly over the tops of the chicken breasts. Return to the oven and bake for an additional 5-7 minutes or until cheese is melted.
- Sprinkle with parsley and serve.
