  • 12 Bacon cut in four equal pieces (organic and pastured preferred, slices

Instructions

  1. Preheat oven to 400 F and line a baking sheet with aluminum foil and place a wire rack on top.
  2. Cut the apricot horizontally, almost but not all the way through, and place one slice of jalapeño inside the apricot.Wrap the apricot in a piece of cut bacon, secure with a toothpick, and place on the wire rack. Repeat for remaining apricots.
  3. Bake for 10 minutes. Flip the apricots and bake 10 more minutes, or until bacon is golden brown.
  4. Enjoy!
