Instructions
- Preheat oven to 400 F and line a baking sheet with aluminum foil and place a wire rack on top.
- Cut the apricot horizontally, almost but not all the way through, and place one slice of jalapeño inside the apricot.Wrap the apricot in a piece of cut bacon, secure with a toothpick, and place on the wire rack. Repeat for remaining apricots.
- Bake for 10 minutes. Flip the apricots and bake 10 more minutes, or until bacon is golden brown.
