Bacon Wrapped Asparagus
Description
This recipe begins by prepping asparagus spears, trimming woody ends and briefly par-cooking bacon to prevent rawness during roasting. The asparagus is lightly coated in olive oil and seasoned with garlic powder, salt, and pepper. Asparagus bundles of five spears are tightly wrapped with one slice of bacon secured by toothpicks.
Roasting at 400°F crisps the bacon and makes the asparagus tender yet firm. The option of broiling briefly can enhance bacon’s crispness. Alternatives include using precooked bacon or swapping with prosciutto, which does not require prior cooking. Variations like parmesan topping or a sweetened bacon glaze add flavor layers.
These bundles can also be grilled or air-fried. When grilling, use a mesh screen to avoid losing the spears through grates. Air frying at 370°F for about 10 minutes achieves a similar tender-crisp result with bacon crispness and minimal oil.
Ingredients
- 8 lices Bacon
- 40 pears asparagus about 2 pounds regular spears
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- salt to taste
- black pepper to taste
Instructions
- Preheat oven to 400°F.
- Rinse the asparagus, dab dry and break off any woody ends.
- Place bacon in a pan and partially cook (do not crisp or brown) over medium heat for about 5 minutes or air fryer for 3-4 minutes.
- Place asparagus on a baking sheet. Sprinkle with olive oil, garlic powder, salt, and pepper. Toss to combine.
- Wrap 5 asparagus spears with one slice of bacon. Secure with a toothpick and place on the same baking sheet. Repeat with remaining bundles.
- Bake 15-20 minutes or until asparagus is tender and bacon is crisp. Broil 1 minute if desired.
Notes
- Choose thicker asparagus stalks for even roasting; thinner ones cook faster and may need shorter time.
- Pre-cooking bacon ensures it crisps fully without overcooking asparagus; alternatively, use pre-cooked bacon and reduce baking time.
- Prosciutto can replace bacon and does not require par-cooking.
- Try sprinkling parmesan cheese or brushing bacon with brown sugar, maple syrup, or honey before baking for variation.
- For grilling, secure bundles with toothpicks and use a grill mat or mesh screen to prevent asparagus slipping through grates.
- Air fry at 370°F for 9–11 minutes for a quicker alternative.
