Bacon Wrapped Beer Brats Recipe with Spicy Habanero Sauce

This recipe features bratwurst simmered in a beer broth with onions and jalapenos until partially cooked, then wrapped in thick-cut bacon and grilled until the bacon crisps. A spicy habanero sauce with tomato base and chili peppers complements the smoky, savory sausages. Served on buns, the dish balances rich, smoky bacon flavors with heat from the sauce.

Description

Bacon Wrapped Beer Brats Recipe with Spicy Habanero Sauce starts by simmering bratwurst in a mixture of light beer, chopped white onion, and jalapeno peppers, infusing the sausages with flavor while partially cooking them. After cooling slightly, each brat is wrapped in thick-cut bacon to add a smoky, fatty layer. The brats are then grilled over medium heat, turning occasionally to cook evenly and crisp the bacon, with an internal temperature target of 150°F.

The spicy habanero sauce blends tomato sauce with habanero and Fresno peppers, Worcestershire sauce, red wine vinegar, chili oil, garlic powder, and seasoning, pureed until smooth and warmed to meld flavors. This sauce adds a bright, fiery contrast to the rich bacon-wrapped brats.

Assembled in buns, these brats offer a hearty, flavorful meal with the combination of tender sausage, crispy bacon, and spicy sauce. The beer simmering step ensures the bratwurst are cooked through and infused with flavor prior to grilling. The recipe yields 10 servings, making it suitable for gatherings and casual meals.

Ingredients

Servings
  • 10 bratwurst
  • 1 white onion chopped, large
  • 2 jalapeno pepper chopped
  • 24 ounces light beer – a flavorful summer lager is great here
  • 10 Bacon thick cut, strips
  • 10 bread bun for serving

FOR THE SPICY SAUCE

  • 8 ounces tomato sauce
  • 3 habanero pepper chopped
  • 1 Fresno pepper chopped
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Chili oil spicy
  • 1 teaspoon garlic powder
  • salt to taste
  • black pepper to taste

Instructions

  1. Set a pot onto your grill’s side burner and add the sausages. Pour the beer to cover them. Add the onions and jalapeno peppers. Bring to a quick boil, then reduce heat and simmer about 20 minutes until they are mostly cooked through.
  2. Cool them enough to handle, then wrap each bratwurst in thick cut bacon.
  3. Heat the grill to medium heat. Lightly oil the grates. Sear the sausages about 15-20 minutes flipping occasionally to avoid burning, until they are cooked through and the bacon is nicely crispy. The internal temperature should be 150 degrees F.
  4. For the sauce, add the tomato sauce, habanero peppers, Fresno pepper, Worcestershire sauce, vinegar, chili oil, garlic powder and salt and pepper to a food processor. Process it until smooth.
  5. Heat the sauce in a small pan about 10 minutes to warm and cook through.
  6. Serve the bacon wrapped brats onto buns and smother with the sauce. Enjoy!
