Bacon Wrapped Caramelized Sesame Asparagus

This recipe features bundles of asparagus spears tightly wrapped in thick-cut bacon, coated with a mixture of olive oil, toasted sesame oil, brown sugar, and garlic, then sprinkled with toasted sesame seeds before roasting. The roasting process crisps the bacon and caramelizes the sugars, giving a savory, sweet, and slightly nutty finish to tender asparagus. The combination of flavors and textures from the crispy bacon and caramelized coating creates an appealing side dish or snack.

Description

Bacon Wrapped Caramelized Sesame Asparagus combines fresh asparagus spears grouped together and wrapped with thick-cut bacon. The spears are brushed with a blend of olive oil, toasted sesame oil, brown sugar, and garlic, which caramelizes during roasting. Toasted sesame seeds add an additional nutty crunch and aroma. Roasting at 400 degrees Fahrenheit for 35 to 40 minutes crisps the bacon thoroughly and softens the asparagus, balancing savory, sweet, and toasty notes.

The roasted bundles offer a contrast between the crisp bacon exterior and the tender stalks inside, accented by the caramelized sugars and nutty sesame flavor. These bundles can be served warm as a side dish, appetizer, or snack, complementing meals with a hint of sweetness and smoky depth.

The recipe benefits from using thick-cut bacon for a better texture and bundling asparagus tightly to hold the bacon in place. Carefully brushing with the oil and brown sugar mixture ensures even caramelization. Toasting the sesame seeds before use enhances their flavor and crunch. Monitor roast time for a crispy bacon finish without burning the sugars.

Ingredients

Servings
  • 1 asparagus about 20-25 spears, stems removed, bunch
  • 4 lices Bacon thick-cut
  • 1 1/2 tablespoons olive oil
  • 1/2 tablespoon sesame oil toasted
  • 1 1/2 tablespoon brown sugar
  • 1 garlic minced or pressed, clove
  • 1/2 tablespoon sesame seeds toasted

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and place a wire rack on top. Spray the rack with nonstick spray. In a small bowl, whisk together oils, brown sugar and garlic. Set aside.
  2. Bunch together 5-6 asparagus spears and tightly wrap a piece of bacon around the bundle. Place on the wire rack seam-side down and repeat. Using a pastry brush, a spoon or even your hands (I did this…), brush the spears thoroughly with the oil/sugar mixture. Give each bundle a hefty sprinkle of sesame seeds. Roast for 35-40 minutes, or until bacon is crispy. Serve warm.

Notes

  • Use thick-cut bacon to maintain a good crisp texture without burning.
  • Toast sesame seeds before sprinkling to boost their flavor and crunch.
  • Brush the oil and brown sugar mixture thoroughly on each bundle for even caramelization.
  • Serve the asparagus bundles warm to enjoy the crisp bacon and tender stalks at their best.
