Bacon Wrapped Dates

Bacon Wrapped Dates are sweet Medjool dates stuffed with creamy goat cheese and a tart cranberry, each wrapped in bacon that crisps during baking. This combination balances sweet, savory, and tangy flavors with contrasting textures, making a flavorful finger food or appetizer.

Description

This recipe uses pitted Medjool dates filled with goat cheese and a cranberry positioned in the center to add tartness. Each stuffed date is then wrapped in a half slice of bacon, secured with a toothpick, and baked until the bacon crisps and turns golden brown.

The baking process renders the bacon fat, crisping the exterior while warming the soft, sweet date and melting the creamy goat cheese inside. The cranberry adds a burst of acidity, balancing the richness of the cheese and bacon.

Bacon Wrapped Dates function well as appetizers or party snacks and may be served warm after a short resting period to allow the filling to set slightly. A drizzle of balsamic vinegar can be added before serving to enhance the flavor complexity.

Leftovers should be refrigerated and can be reheated gently. The recipe scales easily, but when increasing quantities, use multiple baking sheets to allow proper space for even cooking.

Ingredients

Servings
  • 12 Medjool dates pitted
  • ¼ cup goat cheese
  • 12 cranberries
  • 6 Bacon cut in half, crosswise, slices

Instructions

  1. Preheat oven to 375°
  2. Line a rimmed baking sheet with parchment paper or foil
  3. Using a small spoon, stuff each date with cheese (about 1 teaspoon per date)
  4. Push a cranberry into the center of the date
  5. Gently push the edges of each date pocket closed around the filling
  6. Wrap each date in a half slice of bacon, rolling to enclose it completely.
  7. Secure each bacon wrapped date with a toothpick and place on the prepared baking sheets.
  8. Bake for 20 minutes, turning halfway through until bacon is brown and crisp.
  9. Allow to cool for 5-10 minutes before transferring to a serving plate.

Notes

  • Allow dates to cool 5-10 minutes after baking before serving, as the filling will be very hot.
  • This recipe can be doubled or tripled; ensure baking sheets have space between pieces for even cooking.
  • A drizzle of balsamic vinegar on the dates before serving adds complementary acidity.
  • Store any leftovers in the refrigerator and reheat gently before serving.
