Bacon Wrapped Dates Recipe

These bacon wrapped dates combine sweet, chewy dates stuffed with creamy goat cheese and wrapped in crisp bacon. Baking allows the bacon to render fat and crisp up while gently warming the cheese filling. The dates soften but keep their shape, creating a rich contrast of textures. They work well as an appetizer or party snack when served fresh from the oven.

Description

The "Bacon Wrapped Dates Recipe" features pitted dates filled with goat cheese and enveloped in bacon slices, secured with toothpicks then baked. This method crisps the bacon thoroughly while melting the tangy goat cheese inside the naturally sweet date. The baking process also softens the dates without making them mushy, resulting in a combination of creamy, sweet, and smoky flavors in each bite.

The recipe calls for cutting bacon slices smaller to match the size of the dates, ensuring complete coverage while cooking evenly. The two-stage baking time allows the bacon to crisp on all sides for a uniform texture. Serving these warm will highlight their contrasting flavors and textures.

As a finger food, these bacon wrapped dates are ideal for gatherings or as a savory snack. The salty bacon balances the sweetness of the dates, while the goat cheese adds a creamy element that complements both.

Ingredients

Servings
  • 24 dates
  • 4 oz goat cheese or cream cheese
  • 8-12 lices Bacon
  • Toothpicks

Instructions

  1. Preheat oven to 350°.
  2. Prep the bacon by cutting the slices in half or in thirds, based on how long it is and how big your dates are.
  3. Cut the dates lengthwise along one side and pull out the seed. (You do not want to cut through the entire date just one side.) Using a spoon, stuff a small amount of goat cheese into the date.
  4. Wrap bacon around stuffed dates and hold it together by inserting a toothpick through the bacon and the date.
  5. Place them on their sides on a lightly greased foil-lined baking sheet and bake for 10-12 minutes. Flip the dates over to their other sides and bake an additional 10 or so minutes.
  6. Serve immediately.
