Bacon Wrapped Green Bean Bundles
Description
The recipe for Bacon Wrapped Green Bean Bundles features green beans bundled and wrapped with partially cooked bacon slices. The green beans are first blanched in water with baking soda to soften slightly but remain crisp, then cooled rapidly in ice water. Tossing the beans with bacon drippings and seasoning enhances their flavor before bundling. A light brown sugar glaze applied before roasting adds a gentle sweetness that contrasts with the smoky bacon. Roasting at 375°F crisps the bacon and slightly roasts the beans, creating a harmonious texture and flavor combination.
These bundles are a versatile side that pairs well with many meals, offering a tasty way to serve vegetables with rich bacon notes. They can be prepared ahead of time and baked just before serving. Additionally, cooking in an air fryer is an option to achieve crispness in less time.
Pre-cooking the bacon reduces fat, allowing it to crisp without overcooking the green beans. Proper drying of the blanched beans prevents sogginess. Reheating is best done in the oven on parchment paper to maintain texture and flavor.
Ingredients
- 6 lices Bacon
- 1 ½ pounds green beans 6-8 beans per bundle
- ½ teaspoon baking soda
- ¼ teaspoon garlic powder
- salt to taste
- black pepper to taste
- 1 tablespoon brown sugar
Instructions
- Preheat oven to 375°F.
- Cook bacon on the stovetop until slightly cooked (not crispy), about 3-4 minutes. Reserve any drippings.
- Trim and wash green beans. Bring a large pot of water to a boil, add baking soda. Add green beans and cook 3 minutes until tender-crisp. Remove from boiling water and place in a bowl of ice water to stop cooking.
- Dab beans dry and toss with reserved bacon drippings (about 2 teaspoons) or olive oil if you don't have drippings, garlic powder, and salt & pepper to taste.
- Cut each slice of bacon in half and wrap around about 6-8 green beans, secure with a toothpick, and place on a parchment-lined pan.
- Combine brown sugar with 1 tablespoon of water and lightly brush over each bundle.
- Roast 20-22 minutes or until bacon is crisp and beans are lightly roasted.
Notes
- Partially cook bacon first to remove fat and help it crisp when roasted without overcooking green beans.
- Blanch green beans then shock in ice water to maintain texture and color; dry them well before wrapping.
- Bacon-wrapped bundles can be roasted in a preheated oven or cooked in an air fryer at 380°F for 11-13 minutes.
- Use pre-cooked bacon if preferred to save preparation time.
- Prepare bundles ahead and bake them at the last minute for convenience.
- Reheat leftovers in the oven at 375°F on parchment for best results.
