Bacon-Wrapped Green Bean Bundles

This recipe wraps thin green bean bundles with half slices of bacon, secured with toothpicks, then bakes them with a sweet and savory coating of butter, garlic powder, salt, brown sugar, black pepper, rosemary, and optional parsley. The green beans are blanched beforehand to retain bright color and tenderness, while the bacon crisps and caramelizes in the oven for a balanced texture and flavor.

Description

Bacon-Wrapped Green Bean Bundles combine fresh, thin green beans blanched briefly to soften while preserving their color, then coated with a garlic butter blend. Bundled in groups of 8-10 and wrapped with bacon halves, the bundles are placed on a baking sheet and topped with a mixture of brown sugar, black pepper, and fresh rosemary. Baking at 400°F crisps the bacon and caramelizes the sugar, infusing the bundles with a savory-sweet flavor.

The green beans, nestled inside the bacon wrap, become tender but retain slight bite, contrasting the crispy bacon exterior. The garlic and rosemary contribute aromatic notes that complement the richness of the bacon and butter. Parsley sprinkled after baking adds freshness and color.

These bundles work well as a side dish accompanying roasted or grilled meats or for holiday meals, offering an elegant presentation without complicated preparation.

Ingredients

Servings
  • 1 1/2 pounds Green bean haricot verts or french green beans work best, thin, fresh
  • 6 lices Bacon cut in half (do not use thick-cut bacon)
  • 1/4 cup butter melted, salted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2-4 Tablespoons brown sugar
  • 1/2 teaspoon black pepper
  • 1 Tablespoon rosemary finely chopped, fresh
  • 1 Tablespoon parsley optional, chopped

Instructions

  1. Preheat oven to 400°F. Line baking sheet with parchment paper or foil for easy cleanup. Separate the bacon slices and lay flat on the baking sheet. Bake for 8 minutes.
  2. Meanwhile, bring a large pot of salted water to a boil. Cook the green beans for 2 minutes, just until they are bright green and slightly tender. Drain and rinse with cold water for 1 minute immediately or put in ice bath. Pat dry.
  3. Combine butter, garlic powder, and salt in a small bowl. Pour over green beans, tossing to coat.
  4. Wrap 8-10 green beans into a bundle with half a piece of bacon, securing with a toothpick. Lay on the baking sheet and repeat until all of the beans are wrapped. Combine brown sugar, pepper, and rosemary. Sprinkle over the bundles.
  5. Bake for 15-20 minutes until the bacon is crispy and the green beans are tender. Sprinkle with chopped parsley.
