Bacon Wrapped Green Beans
Description
This recipe prepares French or thin green beans by trimming and parboiling them for a few minutes until just tender, then shocking in ice water to halt cooking and preserve texture. After drying, the beans are tossed in a mixture of melted butter, brown sugar, garlic salt, and black pepper, adding a sweet-savory coating.
Bundles of 8-10 coated green beans are wrapped in thin-cut bacon slices and placed seam-side down on a foil-lined pan. The package bakes at a high temperature until the bacon crisps, adding smoky flavor and contrasting textures.
Serve these bundles warm as a side dish. The sugar and butter help form a glaze that caramelizes slightly during baking. Fresh green beans are essential, as older beans won't soften properly. The optional parsley adds a fresh herbal note when sprinkled before serving.
If the bacon cooks unevenly or too quickly, watch during baking to prevent burning. Avoid thick-cut bacon which may not crispen fully within the baking time.
Ingredients
- 1 pound green beans preferably french green beans or thinner green beans will work
- 10 lices Bacon do not use thick cut
- 1 teaspoon garlic salt
- ¼ cup butter melted
- 2 Tablespoon brown sugar
- ½ teaspoon black pepper
- 1 Tablespoon parsley optional, chopped
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Line a large baking sheet with sides with aluminum foil. Place the bacon on the sheet pan and bake for about 10 minutes. The bacon will not be cooked.
- Trim the ends of the green beans.
- Bring a large pot of water to a boil. Place the green beans in the pot and cook for 2-3 minutes or until just tender.
- Drain green beans in place in a bowl of ice water to stop the cooking process.
- Pat the green beans dry.
- In a small bowl mix together the garlic salt, butter, brown sugar and pepper. Pour mixture over the green beans and toss to coat.
- Take 8-10 green beans and place on one end of a slice of bacon. Roll the green beans up with the bacon. Place seam side down on a sheet pan lined with aluminum foil or sprayed with non-stick spray.
- Bake in a preheated oven at 400 degrees F for 15-20 minutes or until bacon is crispy.
- Sprinkle with parsley if desired and serve immediately.
Notes
- Using fresh green beans ensures they become tender after boiling; old beans may stay tough.
- Parboiling beans for 2-3 minutes softens them enough before wrapping without overcooking.
- Thin-cut bacon crisps well in the oven; avoid thick-cut bacon for even cooking.
- The butter and brown sugar mixture adds a glaze that enhances flavor and caramelization.
- Optional parsley adds freshness when sprinkled after baking.
