Description

The recipe seasons ground beef with salt, black pepper, and light paprika, then spreads it on bacon slices laid out side by side. The beef and bacon are rolled tightly using baking paper to form a firm log, which rests in the fridge to firm up, aiding slicing and handling. The roll is sliced into approximately 2 cm thick pieces threaded onto skewers, accompanied by skewers of chili peppers and onions.

The skewers are cooked in a hot pan with oil for 4–5 minutes each side, depending on preferred doneness, or grilled carefully to avoid burning from bacon fat drippings. The result is a flavorful combination of smoky bacon wrapping tender, spiced beef, balanced by the heat and sweetness of chili and onion skewers. The dish can be served alongside warm tortillas for wrapping or accompaniment.

  • 450 g ground beef
  • 150 g Bacon thinly sliced
  • 2 hot peppers
  • 2 red onions
  • 1/4 tsp salt
  • black pepper
  • 1/4 paprika light
  • sumac
  • 50 ml buttermilk
  • 4 - 6 tortillas

Instructions

  1. Season the ground beef with salt, pepper, and paprika.
  2. On a baking sheet, place the bacon slices side by side and then add the beef and roll it tightly in the bacon using the baking paper. The roll can also be prepared a day in advance and stored in the fridge. The salt will act as a glue for the meat and it will be much easier to cut/handle.

  4. Cut the roll into pieces about 2 cm (3/4 of an inch) thick and place them on skewers.
  5. Separately, prepare some skewers with chili peppers and onions.
  6. In a heated frying pan, put a little oil and fry all the skewers on medium heat for about 4-5 minutes on each side, depending on your preference –rare/medium/well done.
  7. The skewers/kebabs can also be cooked on the grill, but be careful not to burn them as the fat will drip from them.
  8. When ready, serve the kebabs with a light sauce of buttermilk and sumac well mixed together and tortillas or pita bread.
